Blueberry Grilled Cheese
Ingredients:
- 2 slices hearty bread (e.g., sourdough or multigrain)
- 1 tbsp (15 mL) local butter, softened (for grilling)
Blueberry Spread
- ½ cup (125 mL) fresh blueberries (or thawed frozen), patted dry
- 1 tbsp (15 mL) honey or maple syrup
- 1 tsp (5 mL) lemon juice
Cheese Filling
- ½ cup (125 mL) shredded local white cheddar cheese
- ½ cup (125 mL) shredded local mozzarella cheese
- Pinch of salt
Directions:
- Prepare the Blueberry Layer: In a small bowl, gently toss blueberries with honey and lemon juice. Let sit for 5 minutes so juices begin to develop.
- Butter the Bread: Spread butter evenly on one side of both slices of bread. This will create a beautifully crisp, golden exterior when grilled.
- Assemble the Sandwich: On the unbuttered side of one slice, layer half of the shredded white cheddar and mozzarella. Spoon the blueberry mixture evenly over the cheese. Top with the remaining shredded cheeses and then the second slice of bread, buttered side out.
- Grill the Sandwich: Heat a non-stick skillet over medium-low heat. Place the sandwich in the pan and cook 2–3 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is fully melted.
