Chorizo and Garlic Shrimp Burger

Ingredients:
- 190 ml (3/4 cup) mayonnaise
- 30 ml (2 tbsp) chipotle pepper sauce
- 675 g (1 1/2 lb) raw chorizo meat
- 1 onion, minced
- 1 small red pepper, sliced
- 8 large shrimps, peeled and cleaned
- 4 large hamburger buns
- 4 slices of Armstrong Monterey Jack Cheese with Jalapeño Slices
- Cilantro to taste
- Salt and pepper
- Corn chips (optional)
Directions:
- In a bowl, mix the mayonnaise with the chipotle peppers sauce and set aside in the refrigerator.
- Shape the chorizo meat into 4 large patties with your hands.
- Preheat barbecue to high heat. Oil the grill.
- Grill the chorizo patties with the onion, red pepper slices and shrimp for 8 minutes.
- Spread chipotle mayonnaise inside the buns. Place the chorizo patties and Armstrong Monterey Jack Cheese with Jalapeño slices on top. Garnish with the grilled vegetables and place two shrimps on each burger with fresh cilantro. Close the buns.
- Serve with corn chips.
