Brown Butter Peach Pops
Serves: 9
Ingredients:
- 2 tbsp (30 mL) Canadian salted butter
- 1/2 cup (110 g) brown sugar, unpacked
- 1 1/2 cups (350 g) peach slices
- 2 cups (500 mL) Canadian vanilla yogurt
Directions:
- In a sauté pan over medium heat, melt butter until it turns light brown. Add brown sugar and peaches to the pan.
- Stir and cook until all the sugar is dissolved (2-3 minutes). Remove from heat.
- Transfer the peach mixture to a food processor and purée the peach mixture until fairly smooth, leaving a few small pieces of peaches.
- In a bowl, gently fold the peach mixture into the yogurt for no more than four strokes.
- Divide the mixture between popsicle moulds and insert popsicle sticks. Freeze for 3 – 4 hours or until frozen.
