Brown Butter Peach Pops

Serves: 9

Ingredients:

  • 2 tbsp (30 mL) Canadian salted butter
  • 1/2 cup (110 g) brown sugar, unpacked
  • 1 1/2 cups (350 g) peach slices
  • 2 cups (500 mL) Canadian vanilla yogurt

Directions:

  1. In a sauté pan over medium heat, melt butter until it turns light brown. Add brown sugar and peaches to the pan.
  2. Stir and cook until all the sugar is dissolved (2-3 minutes). Remove from heat.
  3. Transfer the peach mixture to a food processor and purée the peach mixture until fairly smooth, leaving a few small pieces of peaches.
  4. In a bowl, gently fold the peach mixture into the yogurt for no more than four strokes.
  5. Divide the mixture between popsicle moulds and insert popsicle sticks. Freeze for 3 – 4 hours or until frozen.
